What Would You Make or Suggest??

I've got a hostess who requested the following:

please make something that is similar to taco's. Also, please make a non chocolate dessert and the coffee latte type drink that you make.

What would you make??

Family Size burritto?? Taco Ring??

Dessert, mind is blanking, all I can think of is chocolate, nothing but taffy apple pizza coming to mind.

This is a repeat crowd, so I've done LOTS of different things. Maybe I could make that Skor Bar Dip I just read about?? My mind is too tired!!

Do you usually do three recipes?If it were me (I only do one unless there's more than 12 confirmed coming), I'd do Taco Ring as the main recipe and then do something quick and "finish only" as the dessert while it's in the oven. Apple-Berry Salsa is a good dessert, or the Skor dip.

I agree, it sounds like she wants you to cater the party, when all you are doing is supplying a taste. Remind her that her guests will already have eaten. I agree, do the ring... then maybe have the host have a cake mix made before you get there. You can put in floral cupcake pan quick enough? Or bring cupcakes already made?
 
I agree with the apple berry salsa with a taco ring; then you can call it a mexican fiesta!:)
 
I would suggest telling her that you are not a caterer! Okay, I wouldn't really say that, but I would politely get around that by letting them know "we can do one recipe to demo, have another just ready to top off and if she really wants anything else she can have it ready when I arrive. Otherwise I will have to get there two hours early and it will be a long drawn out show. I'm sure you don't really want me to bore her friends to death. For a lot this is their only night out and they want to socialise. So we need to keep the show around 45-60 minutes at the most."

Family Chicken Burrito.
Cornbread Taco Bake that one of my host swears is a Pampered Chef recipe. She made it ahead and I demo'd Mom's Apple Crisp at a show just last month. (I do all but 1 apple ahead. You can do 4-12 apples and keep the topping the same. It microwaves in 12 minutes and is yummy)

I generally do 2 recipesWell we've decided on the Taco Ring, which when I do, I've got the "inside" almost done, and most veggies done and just show a few on the tools, and slide it in the oven. While that's in the oven I'm going to finish off the Banana Toffee Pizza, which I'll have the crust done ahead and just have to "finish" so shouldn't be bad. As for the drink, I also make that ahead in the QSP and just tell everyone how I've made it.

I'm hoping for good show, she's got 8 confirms yes with 4 on fence with kids schedules and she's got of the 8 confirmed 3 said they were bringing friends, so it might be 11-15 people there and that's just with who rsvp'd and you always get those who never respond.

I do the taco ring at my Mexican theme parties. And the Margarita in the quickstir pitcher but that's for wild crowds usually! I absolutely love Mexican food sooooo the taco ring is easy and if you have prep bowls....just put some sour creme, lettuce, tomatoes. salsa, onion and black olives in them. It's a great recipe and VERY easy! I prep the meat and cheese before I leave and just keep that in the classic batter bowl with the lid on it and just basically all I have to do is form the ring and fill it! I do bring a cuke and nuts to demonstrate the chopper, mandoline and crinkle cutter and knife on. Just have fun with it! Good Luck! :) The apple berry salsa is a hit too!

Can someone post that recipe for the Empanadas Grande? I love empanadas!!! TIA!!! :)
