The Trifle Bowl will hold a dozen homemade moist bran muffins and the lid keeps them nice and fresh. Not to mention it looks pretty too! :thumbup:

Susan, I have some GREAT high fibre recipes I'll post. (My twins have been chronically constipated since 9 wks of age, so fibre is constantly being sneaked into their food).

The first two recipes are some that I have made for my kids & they LOVED them. (Especially the first one.)
Double-Chocolate Muffins
Whole wheat flour and high-fiber cereal are the goodies tucked in a chocolate-lover's sweet muffin. From eatbetteramerica.com
Prep Time:15 min
Start to Finish:35 min
makes:12 muffins
1 cup Fiber OneŽ cereal (original)
1 1/3 cups buttermilk
1/4 cup canola or vegetable oil
1 egg
3/4 cup packed brown sugar
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup unsweetened baking cocoa
1 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
1/3 cup miniature semisweet chocolate chips
1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in oil and egg. Stir in remaining ingredients except chocolate chips. Stir in chocolate chips. Divide batter evenly among muffin cups.
3. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.
High Altitude (3500-6500 ft): No change.

Carrot Cake Muffins (from "Deceptively Delicious")
1/2 c firmly packed brown sugar
4 Tbsp trans-fat free soft tub margarine
1 c carrot puree
1/2 c cauliflower puree
1 lg egg
2 Tbsp frozen orange juice concentrate
1 tsp vanilla
1/4 c dried apricots, chopped
1/4 c pitted prunes,chopped
2 c flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp allspice
Preheat oven to 350F. Spray muffin tin or line with papers.
In lg bowl, beat sugar & margarine until smooth. Stir in the purees, egg, o.j., vanilla, then add the apricots & prunes. Add the dry ingredients and stir until just combined. Do not over mix; there should be lumps in the batter.
Pour into 12 muffin cups. Bake until lightly browned & toothpick comes out clean when inserted into centre (12 - 15 minutes). Turn onto rack to cool.
Fiber OneŽ Crunchy Fudge Cookies
Eat a great-tasting fudgy cookie made with brownie mix and high-fiber cereal. From eatbetteramerica.
Prep Time:15 min
Start to Finish:50 min
makes:About 3 1/2 dozen cookies
1 box (1 lb 2.3 oz) fudge brownie mix
2 cups Fiber OneŽ original bran cereal
2 tablespoons miniature semisweet chocolate chips
1/8 teaspoon ground cinnamon
1/3 cup water
1 tablespoon vegetable oil
2 teaspoons vanilla
1 egg
1. Heat oven to 350°F. Spray cookie sheets with cooking spray.
2. In large bowl, mix all ingredients with spoon. Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
3. Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely. Store in tightly covered container. Freeze up to 2 months if desired.
High Altitude (3500-6500 ft): No change.
