Hey all,

It is baking season again and my daughter and I LOVE making bread (especially in the mini loaf pan) we would love to try some new recipes. We currently make banana, zucchini and appley goodness, does anyone have any stellar bread recipes they would care to share? I have already posted my apple one, and would be happy to post the zucchini and banana if anyone wants it
 
Strawberry Bread

Bread Mixture:
3 cups flour
2 cups sugar
1 teaspoon baking soda
4 eggs, beaten
1 teaspoon salt
2 cups strawberries, cut
1 tablespoon cinnamon
1 1/2 cups oil
Streusal Topping:
1/2 cup flour
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter

Sift dry ingredients together. Combine eggs, strawberries, and oil. Pour into dry ingredients. Mix well. Pour into 2 greased loaf pans. For topping, mix all dry ingredients and cut butter into mix. Sprinkle on top of bread batter and bake at 325 degrees for 1 hour.
 
Chocolate Banana Bread

Yields: 24 servings

"This banana bread features cocoa, chocolate chips, sour cream and a bit of vanilla extract."
INGREDIENTS:
1 cup margarine, softened
2 cups white sugar
4 eggs
6 bananas, mashed
2 teaspoons vanilla extract
3 cups all-purpose flour 2 teaspoons baking soda
1/4 cup unsweetened cocoa
powder
1 cup lite sour cream
1 cup semisweet chocolate
chips

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
2. In a large bowl, cream together margarine, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa; mix well. Blend in sour cream and chocolate chips. Pour batter into prepared pans.
3. Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a loaf comes out clean.

Blueberry Quick Bread
INGREDIENTS
• 5 cups all-purpose flour
• 1 1/2 cups sugar
• 2 tablespoons baking powder
• 1 teaspoon salt
• 3/4 cup cold butter or margarine
• 1 1/2 cups chopped walnuts
• 4 eggs
• 2 cups cold milk
• 2 teaspoons vanilla extract
• 3 cups fresh or frozen blueberries
DIRECTIONS
1. In a large bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in walnuts. In a small bowl, beat eggs, milk and vanilla; stir into dry ingredients just until moistened. Gently fold in blueberries. Pour into two 9-in. x 5-in. x 3-in. loaf pans. Bake at 350 degrees F for 65-75 minutes or until bread tests done. Cool in pan 10 minutes before removing to a wire rack.


I Love this quick bread. I also love blueberries.

Stawberries are kind of hard to find here right now, can they be frozen?
 
I've only made it with fresh ones, but I'm sure you could use frozen. Just make sure they aren't the ones in syrup.
