Hi Jane! I don't have the exact recipe, but here's one that I've tried before and it's really tasty! Ingredients:
- 1 lb beef stew meat, cubed
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 2 cups beef broth
- 1 bottle Guinness beer
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 cup frozen peas
- Mashed potatoes for servingInstructions:
1. In a large bowl, mix together the flour, salt, and pepper. Dredge the beef cubes in the flour mixture.
2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
3. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
4. Add the beef broth, Guinness beer, Worcestershire sauce, thyme, rosemary, and bay leaf to the pot. Stir to combine.
5. Return the beef cubes to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and let simmer for 1 1/2 to 2 hours, or until the beef is tender.
6. About 15 minutes before the stew is done, add the frozen peas to the pot.
7. Serve the stew over mashed potatoes and enjoy! Hope this helps :)
