@ Cynthia C, the use and care stipulates that you can use one side empty if desired. I cooked myself one egg, hubby didn't want anything, and turned out great. On another Note, I use the "boil over no more" on top instead of paper towels. It's easier to stay on, and no waste of paper towels:)
