Re: DcbI did these at a show with 6 boneless chicken breasts. Just increase the cooking time and make sure they are done with the thermometer or by cutting a piece off.
You want to make it look easy - not dirty up more pans to clean.
I wonder why I haven't gotten a reply from them yet! They are usually very speedy.

Room temp would be OK, I guess. I liked them better warm.
I made just the muffin part again yesterday. I mixed the cheese & sour cream together first, then added the cornbread mix, flour & chipotle spices. It was a lot easier to mix that way.
You don't need to. Just scrape a little bit of potato off, so the cream cheese filling sets nicely inside. You're not hollowing out the potato as in twice-baked potatoes.
I've made them twice in the last week -my family loved 'em.
Well, I've seen other posts where you can hire your kid to stamp catalogs, etc and write it off as a business expense. Hiring a tenn to babysit isn't much different.
So I guess, write it off as a business expense but don't fill out the Schedule whatever the IRS uses for "regular" child...
