Ingredients
Two 12-oz bags frozen mixed berries/peaches
1 box white cake mix
Approximately 1 can of diet 7-up or other clear soda
(might need more than 1 can of soda to avoid dry spots)


Instructions
Place frozen fruit in a 9x13 baking dish. Add dry cake mix over the top. Pour soda slowly over cake mix. DO NOT stir the cake mix and the soda - this will give you a 'crust'. If you stir the two, you will have a cake like topping.

Bake 350 for 45-50 min or longer until berries are cooked.

Skinny Taco Dip Recipe
(Makes 24 servings)

Ingredients:
1 (8 ounce) package fat free cream cheese
1 cup fat free sour cream
2 cups chunky, mild salsa
1 packet low sodium taco seasoning
2 cups iceberg lettuce, shredded
1 large tomato, diced
1 cup reduced fat shredded cheddar cheese
1 (2.25 ounce) can sliced black olives

Directions:
In a large mixing bowl, beat together cream cheese, sour cream, salsa and taco seasoning. Spread mixture on the bottom of a 9x13 baking dish. Sprinkle on shredded lettuce, tomatoes, shredded cheese and olives. Serve with tortilla chips.

Made some of those strawberries with yoplait vanilla greek Yogurt. They were amazing. You do need to use a flavored yogurt since strawberries can be a little tart.

Cauliflower Crust Pizza

Serves 2; Adapted from Your Lighter Side.

Ingredients:


1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)

pizza sauce, shredded cheese and your choice of toppings*


Directions:


To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.

One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

To Make the Pizza Crust:

Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.

In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.

Bake at 450 degrees for 15 minutes.

Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Enjoy!

*Note that toppings need to be precooked since you are only broiling for a few minutes.

Guac%20Chicken%20Pasta-001.jpg This is a great recipe to make at parties because it's summery, relatively healthy, easy, and you can use a bunch of PC products making it. Use the boil over no more when you cook the pasta, the RCB or DCB to make the chicken. Use the avocado peeler to prep the avocado then throw it in the MFP to puree it. Use the zester or grater to get the lime zest. And if you happen to have them, this looks good in the bamboo bowls.You'll want to make sure you have a salt shaker nearby. It's good, but very low in sodium and some people like to add a shake or two of salt.Guac Chicken PastaIngredients
6 oz uncooked pasta, cooked according to the box
8 oz boneless, skinless chicken breast
1 tablespoon garlic powder
1 tablespoon onion powder
1 avocado, peeled and seeded
3/4 cup greek yogurt
1 lime, juiced and zested
1 cup cherry tomatoes, halvedDirections
Microwave the chicken breasts in a covered container for about eight minutes or until no longer pink. Make sure that it doesn’t dry out. Shred it and place in a bowl with the pasta and tomatoes.
In a large bowl, combine the garlic and onion powders, avocado, yogurt, lime juice and zest together until smooth.
Add the avocado mixture to the bowl with the chicken. Stir until everything is well coated.Nutritional Info

Cheesy Cauliflower Patties

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko
1/2 t cayenne pepper (more of less to taste)
salt
olive oil

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest

Zucchini LogsSlice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

Greek Yogurt Banana Bread (Muffins)

1/2 C brown sugar
3 egg whites
1/2 c Strawberry Yoplait Source Greek Yogurt
1 tsp vanilla
3 medium bananas, mashed
2 Tbs flax meal
1/2 C whole wheat flour
1 C all purpose flour
2 tsp baking powder
1/2 tsp salt
3 Tbs brown sugar
2 Tbs coconut oil
1/4 C pecans

Preheat oven to 350 degrees. Line or grease your PC Brownie Pan and set aside.

In a bowl, whisk the egg whites with the sugar until light and fluffy. Fold in the Greek yogurt, bananas and vanilla. In a separate bowl, mix together the flours, baking powder, ground flax and salt. Stir dry ingredients into the wet and mix just until combined. Pour batter into pan.

Place pecans, 3 Tbs brown sugar and coconut oil into a small food processor. Pulse a few times, until well combined (3-5 pulses should do). Sprinkle mixture evenly over muffin batter, in tin. Bake for 15-17 minutes; until a tooth pick inserted in the center comes out clean.

For Banana Bread: Grease a loaf pan and in the batter. Sprinkle with nut topping and bake for 45 mins- 1 hr.

4 cups avocados, diced medium
2 cups grape tomatoes or 2 cups cherry tomatoes
2 cups cucumbers, peeled and diced medium
1 cup red onion, diced small
4 tablespoons fresh cilantro, chopped
2 teaspoons fresh garlic, minced
2 tablespoons lime juice
1/4 cup olive oil
salt
fresh black pepper
Lettuce (if you want)

Toss all ingredients in a bowl and top on a bed of lettuce (if desired)
Makes 8 servings

I make this full fat recipe all the time in our rectangular baker. So nice to have a low fat one!

Slim Potato Casserole
INGREDIENTS:
1 (32oz) bag frozen SHREDDED Hash Browns
1 1/2 cups plain Greek Yogurt
1/2 cup Chicken Broth
1/2 cup Milk (at least 2%)
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Season All Salt
1/2 tsp Italian Seasoning
1/2 tsp Black Pepper
1 cup Shredded Cheese (of your choice...but be sure it is NOT low-fat)
Salt and Pepper to taste


*Although this recipe is much lower in fat/calories than the traditional, it still needs some fat to make sure the ingredients bind while cooking...that is why I suggest 2% milk and regular cheese...if you use low fat everything, it will turn out watery....

DIRECTIONS:
PreHeat Oven to 350 degrees.

Combine all ingredients into a large bowl. Grease a 9 X 13 glass or ceramic (no metal!) baking pan with cooking spray. Pour potato mixture into baking pan and spread evenly. Bake uncovered for 55 min.
