Just checking to be sure I'm thinking right here ... I am doing a show Oct 2 with a host who wants the Sept host special. Do I have to backdate everything to the 30th? And can I list it on my website (and her e-invites) as oct 2 and still turn it is as a Sept show? Thanks for the reminders!

I have hosts do this all the time, since I rarely take guest checks at shows. I do enter the host CC 14 times, though, so everyone's receipt shows they paid. Just be sure, if you are printing receipts, to black out the CC number on the guest copy. You CAN enter the entire payment on the host...

Use unseasoned! The pre-seasoned ones have tons of sodium and cooking that fast will intensify the salty taste.
