Anyone have any green, gold or Irish appetizers my host can prepare beforehand?

Afterdinner mint triangles comes to mind. Green and yummy.

The Reuben Ring from All The Best isn't specifically Irish, but it's made with corned beef, which many Americans associate with Irish food. If you want something more appetizery (yeah, I'm using that as a word) than a ring, you or your host could make them into bites by lining the mini muffin pan with crescent roll dough squares and then filling them with the filling.
** Footnote: Corned beef isn't specifically Irish, but it's the closest thing that Irish immigrants in New York could get when they wanted Irish-style slab bacon.

I'm thinking the mini brownie cups w/ the white filling (we call em the decadent dessert cups) and then putting green food coloring in the filling.
