My co-worker is home with a broken ankle and broken wrist (just had surgery yesterday on the wrist). She already takes care of her husband who had a stroke a year ago. Fixing dinner is impossible. I signed up to take her a few meals.

They don't eat red meat, or trans-fats (which she said was cheeses or butter). They really like salads.

I'm definitely making the Harvest Chicken Salad one day, but I need another good idea for my second day. Any suggestions? They also like soups, but I'm having trouble finding one that fits their needs.
 
What about the 30 min chicken with baked potatoes and a side salad?
 
The lemon chicken soup in IT's Good For You is realllllly good! (and easy to make)

Also, we like the 30 Minute Chicken with a the Strawberry Spinach Salad. I'd probably cut the chicken up for them though, since she only has one wrist!
 
Ooh yes ditto on the Strawberry Spinach Salad. There's also the chicken tortilla soup now on Consultants corner. Or any of the DCB recipes. I like the Loaded Baked Potato Chowder or the Grilled Chicken Penne Al Freco. Both are Wonderful and at my shows they all love them!!!
