I'm planning to make a ring for a Margarita party and have never made one before. They looked big but in the book it only says it yields 8 servings. Are those big pieces they are talking about? Can I stretch it to 16? Otherwise I may have to make 2 rings for about 16 people.

RingsThe taco ring or enchilada ring are awesome demos. The 8 servings are dinner sized servings. I personally let my host know that we will only be sampling the food. So you can do 16 samples easily out of one ring. I do not double a recipe unless they have over 20 confirmed guests.

I do suggest my host have munchies, such as chips and salsa, guacamole, or give her the recipe prior to the show to make Touchdown Taco Dip or some other great PC recipe!
