 I'm not sure what it is called. A previous recruit (she is considering rejoining)of mine called today looking for a recipe she thought was in a past SBRC. I can't find it. She says it is a pie, and it has andes mints, cream cheese, and whipped cream in it. Any help would be appreciated. I've tried the PC website, all the books I have and can't find it. :(

Is this maybe it?

Thanks! I'm not sure but I will suggest it to her. She wanted something different for Thanksgiving. She was a consulatant about three years ago. That must have been when she seen the recipe. I don't remember it.

This Creamy chocolate-and-mint pie is the height of dessert decadence.

That sounds like it might be the one. Thanks, I'm thinking about trying one of these this year as well since Pumpkin Pie really upsets my stomach. But my son loves it.

Frequently Asked Questions

What ingredients do I need for a pie recipe with Andes mints, cream cheese, and whipped cream?

To make a pie with Andes mints, cream cheese, and whipped cream, you will need the following ingredients: a pre-made pie crust (graham cracker or chocolate), 8 oz of cream cheese (softened), 1 cup of powdered sugar, 1 cup of whipped cream (or whipped topping), and about 1 cup of chopped Andes mints for flavor and garnish.

How do I prepare the filling for the pie?

To prepare the filling, first beat the softened cream cheese in a mixing bowl until smooth. Gradually add the powdered sugar and mix until well combined. Gently fold in the whipped cream until the mixture is light and fluffy. Finally, stir in the chopped Andes mints, reserving some for garnish, and pour the filling into the prepared pie crust.

How long should I chill the pie before serving?

After assembling the pie, it is recommended to chill it in the refrigerator for at least 2 to 4 hours. This allows the filling to set properly and enhances the flavors. For best results, you can chill it overnight.

Can I use other types of chocolate mints instead of Andes mints?

Yes, you can substitute Andes mints with other types of chocolate mints, such as Junior Mints or mint chocolate chips. However, keep in mind that the flavor and texture may vary slightly, so adjust the amount to suit your taste preferences.

What can I serve with the Andes mint pie?

This delicious pie pairs well with a variety of accompaniments. You can serve it with additional whipped cream on top, chocolate sauce drizzled over the pie, or even a scoop of vanilla ice cream for a delightful contrast. Fresh mint leaves can also be used as a garnish for an extra touch.
