I have my show with 30 people on saturday, how soon can I assemble the turkey ring for the saturday show. I plan to make ahead and just cook there.

I would think that if you assembled too long before baking it would get soggy. Besides when her guests get there she will tell them you put it together in just a couple minutes and they will be so impressed.
 
I'd whip up the filling the night before in the Batter Bowl, put the lid on, and toss it in the fridge. Then when you get to her house all you have to do is assemble it and pop it in the oven.
