I just tried the Sunshine Cake-not sure if that is what it is called. I followed the recipe exactly. The recipe said microwave on high for 13 minutes or until cake tester was clean. The recipe said the cake would be moist/not seem done at the middle of the pan. After 13 min. the cake wasn't done. I put it back in for 2 minutes and tested again, still not done past the middle of the cake (not the middle of the pan). So, I tried again for 2 minutes. The cake tasted good, but was "heavy" - kind of rubbery. So, did I overcook it? Or maybe stirred it too much. I know when you over-stir bread it is "heavy". I want to make this cake for a show next week, so can anyone give me some suggestions?

Thanks,

Shawnna

Shawnna,
I am not sure what happened. Do you have a microwave that turns? I know when I have made the microwave cake, it MUST be turned. If not, have of it gets done and have not.

I'd try again or choose to do something different until you can figure it out.

sorry; have never made one!

Frequently Asked Questions

What causes Sunshine Cake to overcook in the oven?

Sunshine Cake can overcook due to several factors, including incorrect oven temperature, using the wrong pan size, or baking for too long. It's essential to ensure your oven is calibrated correctly and to follow the recipe's recommended baking time closely.

How can I prevent my Sunshine Cake from overcooking?

To prevent overcooking, always preheat your oven and use an oven thermometer to check the temperature. Additionally, consider using a light-colored, non-stick pan, as darker pans can cause the cake to cook faster. Keep an eye on the cake during the last few minutes of baking.

What should I do if my Sunshine Cake is overcooked?

If your Sunshine Cake is overcooked, you can try to salvage it by serving it with a moist topping, such as whipped cream or a fruit sauce. Alternatively, you can use it as a base for a trifle or crumble, incorporating layers of cream and fruit to add moisture.

How can I tell if my Sunshine Cake is done baking without overcooking it?

The best way to check if your Sunshine Cake is done is to use a toothpick or cake tester. Insert it into the center of the cake; if it comes out clean or with a few moist crumbs, the cake is done. Start checking a few minutes before the recommended baking time to avoid overcooking.

Can humidity affect the baking of Sunshine Cake?

Yes, humidity can affect the baking of Sunshine Cake. High humidity can cause the batter to absorb moisture, leading to longer baking times and potential overcooking. If you live in a humid climate, consider adjusting the amount of flour or baking time to achieve the desired texture.
