No cheffer birthdays....:cry::confused:

Tonight for dinner I am not sure what we are having....but it will definitely be something on bbq...sun is finally out:love::thumbup::balloon:....

Chefbecky....I made steak fajitas last night with all the fixings (tmoatoes,peppers and onions, lettuce,etc.) can your son have these? Just omit the cheeses and find a wrap that is okay for him (they now make them in all flavors--whole wheat, gluten free, etc)...I was thinking of you and the little guy when we were eating them...

Here is my recipe for the chicken and peas dish I mentioned:

canola oil
1 onion
chicken (I get the cheapest white meat and slice it up into bite sizes)
1 can peas--tiny, sweet are sooo yummy
1 8 oz can tomato sauce

1.saute chopped onion in oil until soft over medium heat
2.add chicken bites and and cook about 3/4...white outside, little bit pink inside
3.add tomato sauce that you thin out w/water about 1 cup or so
4.strain peas and add
5.simmer while rice is cooking.....I like to let it simmer for at least 45 min. to get the flavors mixed.
6.flavor it up w/oregano, basil, pepper (whatever floats your boat)

we usually serve over white rice, but I know this won't work for your little guy (what is his name btw?)...so brown rice should be fine...this is probably one of the few times I use white rice.
Also, you can thin it w/more water if your prefer thinner, and can use tomato paste if you don't have sauce.Good Luck, let me know how it turns out for you! :chef:
 
Thanks Barbara!:chef:He can have some white rice now - I just usually don't have white rice in the house. However, we have a new puppy who has to be on a white rice & ground turkey diet for a few days, so I actually bought white rice yesterday. :)His name is Micah. :love: We've found one wrap he can eat (most gluten-free ones have some type of corn in them - can't have corn!) and we did have tacos one day last week. He loved that! I'm sure fajitas will be on the menu soon. We eat those quite often.For dinner tonight, we are having the Burgers we didn't have yesterday. DH thought pork chops sounded better, so yesterday we had grilled chops w/ baked beans, and an amazing green salad.Tonight, we'll have burgers on the grill w/ homemade coleslaw....and I'll have to think of what else to have with them. Maybe a fruit salad. That sounds good!
