Pampered Chef: What are some good main vegetarian dishes?

    I have a show coming up for a girl who's a vegetarian. I'd like to give her a couple options and all I can come up with is the Three Cheese Garden Pizza....Any other ideas?

    I can personally vouch for the "delicious-ness" of the Three Bean Vegetarian Chili. Last time we moved it to a crock pot for about 3 hours on low after the initial saute-ing of the vegetables. Extremely yummy -- even to carnivores. ​

    I am also having a show for vegetarians and came on here to search for the same thing! I was going to suggest one pot pasta, but it uses chicken broth and so it's not vegetarian. Does anyone know if it would be as good without the chicken broth and maybe vegetable stock instead??

    I actually made the Creamy One Pot Pasta for this hostess at her last show! I used the vegetable broth instead. They all LOVED it!! I'm thinking of doing the Three Cheese Garden Pizza...hopefully if she has somethings to eat as well...it will be filling enough! The party is at 6...so I would assume a lot of people are coming hungry...that's my only concern! Maybe I'll do the Molten Chocolate Lava Cake as an extra to make sure! I LOVE doing that and it's soo fast!
