• The freshness of spices and herbs can be maintained longer by storing them in airtight containers.
• Spices do not like heat, moisture, and direct sunlight. Avoid these because they accelerate the loss of flavor and aroma of spices and herbs. Avoid storing on or over your stove, near the dishwasher, sink or close by a window.
• Spices should never be stored in the freezer. Freezing does not extend the shelf life of regularly used dried spices and herbs.

*Get rid of the old spices in your spice rack or cabinet, and buy fresh. Do this every year around this time, and you'll notice the difference.

*Consider using a pepper mill. Using fresh ground pepper adds lots of flavor to everything--you'll never want pre-ground pepper again.

*Try kosher salt for cooking. It's not iodized, so it doesn't have that metallic taste we've grown used to.
 
Plus, it's larger than table salt, so you can season things more easily and accurately. *Keep a variety of herbs and spices in your kitchen to add flavor and depth to dishes. Try to buy them in small quantities so that you are always using the freshest spices. *If you're short on cabinet space, use an over-the-door shoe organizer to store your herbs and spices. *Label each container with a date so you know when to replace them.
