Delicious Diabetic Recipes: Perfect for Show Displays and Everyday Meals

In summary, a consultant who recently learned she has diabetes is looking for diabetic-friendly recipes to offer at her Pampered Chef shows. The PC It's Good for You cookbook in the US has nutritional information for each recipe, but it does not specifically focus on diabetic recipes. Some ideas for diabetic-friendly recipes using Pampered Chef products include grilled chicken and vegetable skewers, zucchini noodles with shrimp and pesto, baked salmon with lemon and dill, roasted vegetable medley, turkey and vegetable stir-fry, Greek yogurt and fruit parfait, cauliflower pizza crust, baked sweet potato fries, berry and spinach salad, and grilled vegetable and quinoa salad.

I have a consultant who just learned she is diabetic. It has shaken her up a bit. She would like to offer recipes at shows that are diabetic friendly...plus find some for herself as well. I looked in the files but didn't see anything specific to diabetic recipes. Can anyone help with ideas, preferably actual PC recipes that she could make at shows.

Can you get the PC It's Good for You cookbook in the US? It has the diabetic exchanges (nutritional content) following every recipe. There are lots of great recipes in that book.
