I have a customer looking for various dessert recipes to use in her HWC Martini Glasses. Any suggestions?

You can modify almost any trifle recipe and do it as individual trifles in the glasses as opposed to one big one in the trifle bowl. That makes for a beautiful dessert and avoids the mess it makes when everyone starts dipping out of the big bowl. There are tons of PC trifle recipes on here, the easiest way to find them is either by searching in the files or go to goole and type:

trifle site:chefsuccess.com

to search all the pages of the site for trifles.
