Amazingly Moist Chocolate Cake Recipe

In summary, Jill shared her recipe for a killer chocolate cake, which was made with chocolate cake mix, eggs, oil, milk chocolate chips, instant chocolate pudding, Kahlua, and sour cream. It can be cooked in a microwave, and was a hit with everyone who tried it. Alternatives to Kahlua were discussed, and it was mentioned that alcohol does not completely cook out of dishes. Jill also shared some tips on how to make the perfect cake.

Awesome cake, I will have tt try it. I have a question since your on again. Since you are soooooooooo organized do you by chance have a list of all the thing you list for your taxes that you might post for us? I am just starting and you seem to have a system well established.

That cake looks so good I licked my computer screen!!:p

Um, Yes of course....let me find that thread and copy my categories from my PP and post them to help those in need out.

What can you use instead of kahlua?

It almost looks like you and I have the same dish, lol. My mother got the crystal dish I love to use from someone for Christmas and didn't want it, I use it all the time to do cakes and stuff, but I couldn't really tell if yours had a flared edge on it. Mine is in the pictures I posted yesterday (I think) of the doll cake.

HAHAHAHAHA, It is! I don't like Cake alot, but I love Kahula. You know that will be a hit cake at a February show with some ladies. Add alcohol to anything and people smile. It has chocolate chips. My step daughter even suggested white chocolate chips inside which would have been neat. I used cool whip on the outside, but I may use real icing next time. It was soo moist and SOOOOOOO yummy.

Great great ReCipe. Grease flute pan well though and let it cool. Chips cause extra sticking.

I don't know what you can add instead of the Kahlua but you can't taste it at all..well bearly. My 11 year step daughter is going down stairs for another piece...LOL

I don't drink, and many of my customers would shy away from something that had alcohol in it. However, some of mine would go crazy! I'm doing a couple's show on Friday where we are making the smashed potato soup and a microwave fluted cake - I might offer this one to her!

  • #10
Wouldn't the alcohol cook out of it? I'm not positive, but there couldn't be much in it.

  • #11
I spelled lick wrong on my first post!! I went back and changed it. I mean I do like my computer screen, but I meant to say I licked it!

Yes..this cake would be for particular groups. The kahula I am sure cooks itself once baked and as I said it is bearly tasted. But heck get a bunch of teachers or ladies for a girls day out and this cake is sure to be a hit. This cake would also be a hit to show some ladies for a romantic dish for their loved one for a night for two. It's quick and easy and can be cooking while they are doing something else.

Alcohol never completely cooks out - even when you flambe. However, in order to get any "side-effects" from the alcohol, you probably would have to eat about 10 of those cakes.

HAHAHAHAHAHHAHAHAHAHAHAHAHA. 10 cakes...Well I know I won't ever do that if I want to fit in my office clothes...LOL
I guess I dont' have to worry about the Kahula then...HEHEHE

I would think you could use coffee instead of the kahlua. Doesn't kahlua have a coffee-y taste?

This cake sounds delicious. Definitely gonna give it a whirl!

Thanks, Jill!

Diane

P.S. Jill, I love reading your posts. You always put a smile on my face!

Well thank you Diane..that just put a smile on my face. :D Glad I can affect someone that way. I am usually laughing myself when I type...LOL. Ammusing myself...LOL

My BF just said..yeah well why don't you tell them how frustrated you were tonight and thinking this wasn't for you...I said NAAAAAAAAAAA, I am over it now..I was just venting..I don't give up that easy...HAHAHAHA. The cake doesn't taste like Coffee at all, so I don't know if coffee could be added or not...maybe there is a hint and I don't notice at all.

Oh geez..maybe I am just too much of an alchi to notice..(haha just kidding)

Yeah as I said I can do the cakes..but I just don't have the what to say part down and moving my hands and mixing. I am very confident with the cakes. I think putting the stone has the WOW factor in self..but I need to find my niche in another couple of recipes...I am stumped tonight....Guess I'll try tomorrow...;)

When you bring alcohol to a boil it does. I make penne ala vodka and it calls for 2 shots of vodka.

Sub for KahluaI wasn't too far off with the coffee idea. I checked www.gourmetsleuth.com, and this is what it said:

2 tablespoons Kahlua or other coffee or chocolate-flavored liqueur, substitute the following:
1/2 to 1 teaspoon chocolate extract plus 1/2 to 1 teaspoon instant coffee granules dissolved in
2 tablespoons hot water.

HTH,
Diane

Unfortunately, alcohol NEVER cooks out completely...it's kind of a cooking myth. However, it is very useful to "unlock" alcohol soluble flavors. For more info - not very Scientific - check here:

http://wqd.netwarriors.org/archive/index.php/t-1288.html

I just did a quick search and this was the first I came up with. Anyhoo, most people who don't drink alcohol for religious reasons also don't drink coffee - I think I would prefer to put the alcohol in. :D

  • #22
I don't find that to be true. I don't know any Christians who don't drink coffee, but I don't know any Christians who do drink alcohol. The Bible talks about drinking alcohol, but I don't know any place it talks about coffee...although, too much of anything is bad for your body/temple. I would have to say that none of my Christian friends would want anything with alcohol in it. And, they would be offended. I can't even sell the beer bread mix. Thanks for the substitution suggestion. Alcohol is a personal choice that we all have to make for ourselves. You know your customers and what they like/dislike. I wish you all much success with your businesses.

I'm Mormon and many of my customers are, too. I didn't want to get into a debate or anything, I was just trying to find something to offer as a substitute. We don't drink alcohol, coffee, "hot drinks", use tobacco or any drugs (other than ones prescribed).

Kate,Maybe the DaVinci Gourmet syrups would work? They have a Kahlua flavored syrup.I'm not certain that this would work, you might want to try it first (and read the label to make sure that it doesn't contain anything you and your customers don't want.Their website is www.davincigourmet.comI hope this helps.Ann

Ann - great idea! I never would have thought of it. I'll let you know if it works out!

What a good idea about the coffee syrups! I am not mormon, but have a lot of friends who are and I can't imagine not drinking coffee. I LOVE me a frappachino!! I can't have the kaluah because of the "large onion" that is beating up my internal organs!

  • #27
Ann that is such a good idea for the syrups. Would it be the same amount or would you use a little less?

I have made this cake for years without the alcohol and it is great. The friend that gave me the recipe said she couldn't tell much difference either way. You can always try it without and see if you like it.

ps. it seems like an aweful lot of liquidy ingredients for 1 cake, (1Pt. of sourcream) wow ! I would hope it's moist with all that's in it! I am going to try it tomorrow for a family dinner and use the Starbucks liqeur!

I emailed the DaVinci Gourmet syrups people last night and I woke up this morning to this:

Good morning, Kate!

I appreciate you taking the time to contact DaVinci Gourmet. There is no coffee that is actually added to the syrup, but the natural and artificial flavors do contain some coffee. The alcohol content is 0.0506%. So, it is almost nonexistent. Please feel free to contact me with any further inquiries.

Best regards,

Then it got bigger and started calling baby a 'Tiger Shrimp' She had her ultrasound last week and found out she is having a boy. He is now about 10 ounces. She turned to her hubby and asked about how big is that... he said a coke can is about 12 ounces.. hee hee she is now calling her baby a 'coke baby'!! LOL Funny how poor baby is sized to what food is!! LOL she and I both looooooooooooooove food!! hee hee and it seems to show with her little boy to be!

I dont have any luck with respect to microwave cake.. I tried one back in the fall, it became more of a lava cake.. My poor cake seemed to errupt and oooze like a volcano. It baked on one side and ooozed on the other. I don't see the point myself of having to stop my microwave every few minutes to turn it (I don't have a turntable in my microwave) and I would be worried that it wouldn't work at a show and I would have to explain why the cake now looks like a volcano and have to clean up the devastation due to it!

In the meantime, I do make a wonderful 'killer cake" of my own that I bake and I think it would be something I could use with PC products. There is no kahlua in it at all. I still have it in my recipe book, but when I get a chance I"ll post it to this site!

Cheers

The DaVinci syrups are good. I have the sugar free Kaluah one. I use the real Kaluah in my cakes (ok i only made it once) It is such a little amount in the cake. I am a Christian and I have no problem with it. I do alot of my shows for Christians and I dont think they would have a problem with it either. But I do know that some people do. So maybe just ask the host before hand if she knows of any guests that wouldnt eat it.
I also dont think people should be offended by it. YOu are not forcing them to eat it. If you personally chose not to drink you should not be offended by someone offering you kaluah cake. Just say no thank you. I hope no one is offended. I dont think that is right. I am under drinking age so it is no issue with me! I have to make sure my hosts buy the booze! If i ever cook at home and need wine i have to ask my daddy to go to the store with me to buy the booze!

  • #41
I want to put a bit of a different angle on this one. It makes no difference to me whether someone uses the Kaluah or not... except this... I personally NEED to be told if there is any form of alcohol in something. I am VERY allergic to ingested alcohol of any form... even when baked or cooked... much like others are to nuts etc. I am meeting more and more people all the time who also have this.... so for your own liability... I would mention that it's in there... I also know that adding a bit of strong coffee to anything chocolate... makes the chocolate flavor more rich and intense so maybe you could just use that?

OK, if you're not opposed to alcohol or anything else in this cake, I just tried a slight variation of this recipe. Instead of using kahlua, I used Bailey's Irish Cream. Mmmmmmmmm! And you CAN taste the Baileys. I also used fat-free sour cream and semi-sweet chocolate chips because that's what I had on-hand.

Thanks again, Jill, for sharing this recipe!

Uhmmm...doesn't Baileys have alcohol in it?

I saw where someone said you'd have to eat like 10 of the cakes to get the effects of the alcohol and I was thinking, "hmmm... that looks so good I probably could eat about 10 of them!!" :D Is that bad??

Oh yeah, the Bailey's version is good. I keep eating chunks and then pushing the ends together to make it still look like a circle. My DH is going to come home and say that's the smallest cake he's ever seen!
