Free Scanned Doc Editing Software?

Anyone have any recommendations for FREE software I can download to my computer so I can edit someone's scanned Word or Excel docs or a pdf? Thanks!

I didn't know that such a thing existed. I figured the ability to edit a document was determined by how it was originally scanned and saved.

This is what I use for PDFs: http://www.pdfescape.com/ It allows me to unlock the "filler" sections on our outside order forms and do what I like. You can white out original information and then add a form field or text field to put info you want to include. So, this might not be exactly what you're looking for but it fills my needs.
