What Are the Best Cookie Types for a High-Efficiency Cookie Exchange Show?

I have 4 Shows in December that we are doing a Cookie Exchange! The guests will bring 4 dozen cookies of some kind, along with a plastic container. At the show we will make 3 different kinds of cookies. I am definitely doing the cookie press but was wondering what other kinds you guys would suggest. Since the cookies will be coming in and out of the oven, I want the others to be something easy and maybe almost done.. Like at we started this before you got here and now let's finish it?

Do you think the peppermint bark? What other creative ones do you think?

I made the peppermint bark last weekend. It's really easy and quick!! perfect for inbetween when cookies are in the oven!
 
The chocolate mint bars from last years SB were a HUGE hit for me - I did those with cookie press cookies at several Cookie Exchange Shows last year.

HOw about the Pecan Tassies? You could do up the tart pan in advance and just do the filling at the show! Explaining how you did the tarts first.??
 
What about something like Chocolate Dipped Nutterbutters? Buy prepackaged, and then demos the double boiler, and you aren't competing for oven space.
