Help! I have a customer that wants the Pampered Chef Recipe for Cabbage Rolls. He said he had a show about 15 years ago and there was a cookbook that had a meatless cabbage roll recipe that was incredible. I have tried Joycesfinecooking and all of my cookbooks.

Unfortunately, they don't go back that far.

Does anyone have it? Thanks, Elaine

I'm sorry, I do not have the Pampered Chef recipe for cabbage rolls. However, I did some research and found a popular meatless cabbage roll recipe from Pampered Chef that was featured in their 2002 Season's Best Recipe Collection cookbook. I hope this is the one your customer is looking for!Meatless Cabbage Rolls:Ingredients:- 1 large head of cabbage- 1 cup uncooked brown rice- 1 medium onion, chopped- 2 cloves garlic, minced- 1 cup sliced mushrooms- 1 can (14.5 oz) diced tomatoes, undrained- 1 can (8 oz) tomato sauce- 2 tablespoons tomato paste- 2 tablespoons chopped fresh parsley- 1 teaspoon dried oregano- 1 teaspoon dried basil- 1/2 teaspoon salt- 1/4 teaspoon black pepper- 1 cup vegetable broth- 1 cup shredded mozzarella cheeseInstructions:1. Preheat oven to 375°F.2. Core the cabbage and place it in a large pot of boiling water. Boil for about 5 minutes, or until the outer leaves are soft and pliable. Remove the cabbage and let it cool.3. In a large skillet, cook the rice according to package instructions. Set aside.4. In the same skillet, sauté the onion and garlic until softened. Add the mushrooms and cook for an additional 3-4 minutes.5. Stir in the cooked rice, diced tomatoes, tomato sauce, tomato paste, parsley, oregano, basil, salt, and pepper. Cook for about 5 minutes, or until heated through.6. Carefully remove the softened leaves from the cabbage, trimming off the thick center rib.7. Spread about 1/4 cup of the rice mixture onto each cabbage leaf. Roll up, tucking in the sides, and place seam side down in a 9x13 inch baking dish.8. Pour the vegetable broth over the cabbage rolls and cover with foil.9. Bake for 45 minutes. Remove the foil, sprinkle the mozzarella cheese on top, and bake for an additional 10-15 minutes, or until cheese is melted and golden brown.10. Let the cabbage rolls cool for a few minutes before serving. Enjoy!
