I was just at a demo where they made athenian pastry squares. Our director said the recipe was available on the pc website but I can't find it.

So does anyone have this recipe? Can you type it up for me?

Athenian Pastry Squares RecipeIngredients:- 1 package (17.3 ounces) frozen puff pastry, thawed- 1 egg, beaten- 1 cup crumbled feta cheese- 1 cup chopped fresh spinach- 1/4 cup chopped sun-dried tomatoes- 1/4 cup chopped Kalamata olives- 1/4 cup chopped fresh parsley- 1/4 cup chopped fresh dill- 1/4 cup chopped fresh mint- Salt and pepper to tasteInstructions:1. Preheat oven to 375°F.2. On a lightly floured surface, roll out the puff pastry to a 12x12-inch square.3. Brush the beaten egg over the pastry.4. In a medium bowl, mix together the feta cheese, spinach, sun-dried tomatoes, olives, parsley, dill, and mint.5. Spread the mixture evenly over the pastry, leaving a 1-inch border around the edges.6.
