Why don't you do a seven layer salad (dairy) &/or a 3 cheese garden pizza and then do a couple of desserts. It would be easier to make a dairy entree and then make a decadent dessert than to try to find a good non-dairy one. After all, almost everyone goes wild over chocolate.

wipe the surface before bakingAfter spraying with Pam or anything really, wipe the flat surface clean to prevent the build up on the surface before adding the mixture to the cupcake wells. This should eliminate most problems.
Make a deal with the host.Personally, i have never had a host refuse to buy the ingredients. But, if a host had difficulty with the cost, I would make a deal about who pays depending on show product sales total. If her show goes over $500, offer to split the cost 50-50. If sales are over...
Don't use a Rachel Ray recipe at a PC show! Always use our recipes which are alomost always fast to prepare in the home kitchen. Tell your host that our recipes are fast to prepare although prep is slower at show because you are demonstrating to show products to sell.
Outside order forms are not official receipts so you do not need to copy other info on the back. Outside orders need to be tranferred to an offical receipt by hand or printed on the computer receipt paper.
