Gluten Free Mini Banana Breads

Hi everyone :D
Since a couple of people asked for the recipe, I decided to post it here. It is not my recipe though, gotta give credit to Namaste:cool:

2 cups Namaste Foods Perfect Flour Blend
1 tsp baking soda
1/8 tsp salt
1/2 cup canola oil
3/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
3 bananas, mashed
1/2 tsp gluten-free vanilla
1/2 cup coarsely chopped walnuts (optional)

The only thing I did differently was to use the Brownie Pan. I cooked it approximately 30 minutes. I would start checking about 20 minutes into cooking, just because I'm not sure how everyone else's oven temps run.

Directions
  1. Heat oven to 325° F. Lightly spray 9x5 loaf pan with non-stick spray.
  2. In a medium size bowl, sift together the Perfect Flour, baking soda and salt. Set aside. In a large mixing bowl mix together the canola oil and sugars. Add eggs, mashed bananas and vanilla, stirring until well blended. Fold in the dry ingredients and walnuts (if using.)
  3. Pour batter into prepared 9x5 loaf pan and bake for approximately 65-75 minutes or until toothpick inserted in center comes out clean. Transfer loaf to wire cooling rack to cool before serving.
