as a young single mom myself i try to pick receipes that are simple and my PICKY children will eat i would try to focus more aon the TIME not the receipe and i would call your direcyor or recruiter and see if they have the Let's Eat child cookbook TONS of easy recceipes not too fancy but
 
.1. One-Pot Pasta: In a large pot, cook 1 pound of pasta according to package instructions. In a separate pan, sauté 1 diced onion and 2 minced garlic cloves in olive oil until softened. Add 1 can of diced tomatoes, 1 cup of chicken broth, and 1 teaspoon of Italian seasoning. Let simmer for 10 minutes. Drain the cooked pasta and add it to the tomato mixture. Top with Parmesan cheese and serve.2. Rice Cooker Chicken and Vegetables: In a rice cooker, combine 1 cup of rice, 1 cup of chicken broth, 1 diced chicken breast, and 1 cup of mixed frozen vegetables. Cook according to rice cooker instructions. Serve with a side of steamed broccoli.3. Sheet Pan Chicken Fajitas: Preheat your oven to 425°F. On a sheet pan, toss 1 sliced bell pepper, 1 sliced onion, and 1 sliced chicken breast with 1 tablespoon of olive oil and 1 packet of fajita seasoning.
