Delicious Chicken Salad Recipe: Perfect for Beginners!

Does anyone have a recipe for chicken salad? I have never made it before and my DH would like it for dinner. Thanks
 
2 ½ cups cooked chicken, or 1 bag of Tyson's grilled chicken, chopped fine

1 cup celery chopped fine

2 small scallions chopped fine

½ cup golden raisins

½ cup chopped pecans

2 green tart apples, peeled and chopped

2 teaspoons Dijon Mustard

1 cup Mayonnaise

Salt & Pepper to taste

Shredded iceberg lettuce
 
Chicken Salad
3 lbs chicken breast boiled, cooeld and shredded
2 cups chopped pecans
1 lb seedless green grapes halved
1 bunch celery
1/2 jar (or more) Briannas poppyseed dressing
1/2 -3/4 cup Hellmans
1 cup Lopez cream of coconut (found in the mixed drink aisle)mix all together refrigerate serve on croissants
 
I have a very plain version.

chopped chicken
chopped celery
mayonnaise
sweet pickle relish w/very little juice
salt & pepper to taste
 
shredded chicken
1 t. curry powder
1 T. dill pickle relish
1 small jar pimentos
1 can chopped water chestnuts
chopped pecans
salt & pepper to taste
mayo & sour cream in equal amounts to desired consistency

Mix together.
 
chopped chicken (usually I use all the breast meat from a 3-4 pound chicken cooked in the micro)

mayo
sliced red grapes
chopped celery
and about 3-4 tblsp. mango chutney

Yum...I think I need to make some too !
 
cooked chicken
diced dried mango
green onion (I think you call it something different in the US)
mayo
fresh ground pepper
a bit of finely diced celery
paprika

Even easier...

chopped celery and onion
Hellmans Mayo
salt and pepper to taste.

Nothing fancy, no fruit or nuts, just simple chicken salad.
I know there are some who are Mircle Whip fans, but I am a diehard Hellmans gal!
 
I make mine like this:

Chicken breast cooked and shredded
Bacon pieces crumbled
Hard boiled eggs
Finely chopped celery
Finely chopped green onion
Mayo
salt and pepper to taste

I just made this for a mom's get together on sliced french bread. We had leftovers on french bread with melted cheese from the oven. Very tasty. My kids will eat anything with melted cheese on it.

This is what I do! DH would have a cow if I added nuts or fruits...

I love those extras, but he is a plain meat and potatoes man!

Mmmmmm...when we do chicken salad, I make them on crissonts (I can never spell that right!), melt cheese over the top, and then add CRUSHED POTATO CHIPS!! Yumm!!

See, I am just the opposite, keep it simple and I am good. Get all wacked out when someone brings me chicken salad with fruit, etc in it. Guess I am just a simple girl at heart!!

Hot Chicken Salad Recipe courtesy Paula Deen


2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 cup grated sharp Cheddar
2/3 cup crushed potato chips

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.



Recipe Summary

Cook Time: 20 minutes
Yield: 8 to 10 servings

Like I said, not a big fan of nuts, but I can stand this. Of course I can, it has potato chips and cheese!!!

Yup, this is mine too:) I don't like fruit or nuts in mine:yuck: and Hellmans all the way:chef:

Oh this sounds really good Debbie. I'm going to have to try it with the bacon and boiled eggs.

I love the PC recipe Curry Chicken Salad. Not the warm version. It does have Granny Smith apples and cranberries in it. I like it. My boys (ages 9 and 10) like it, too. My four year old can't get enough. She wil eat it like a lettuce wrap. The boys have to have it with crackers though.

I just found it in the SB F/W 04, but I know it is a more current one also. It is officially called, Curried Chicken Lettuce Wraps. It also happens to be a "light" recipe. Let me know if you need it.

Here is what I ended up making last night

2 cups chicken
2 hard boiled eggs (white part only)
2 celery stalks chopped
1/2 cup mayo (Hellmans)
1/4 cup cream cheese (the one in the tub for bagels)
Salt and pepper
Handful of pecans

My DH loved it and my kiddos would not even try it.

For mine, I never make it with the pecans. The recipe calls for them, but I never put them in. Still just as yummy! :D

I use rotisserie chicken in my chicken salad. Adds lots of flavor
