Also, which recipe are you using? I counted no less than four recipes in this thread. Maybe it's not supposed to rise much.

There's a one-hour bread recipe going around on FB for the DCB that is different than any of the ones here. The ones in this thread are for artisanal results, i.e. chewy crust, large air holes, etc. The one I mentioned is more regular-like. I'll post it in another thread.

Im doing the dcb, artisan.. and i followed Michele Zito step by step...im in the first rise step, so far its looking much better then yesterday!

They show this recipe on the website with a video. They just do not preheat the baker. Most breads you don't have to preheat. This is the only recipe that I know of that says to put the bread in the pan after it's hot. I think it will work fine without doing that.

Came out perfect when I proofed the yeast before adding it to the flour! And I did not preheat.. thank you everyone for your input

I used to make no knead bread in my clay bakers a few years ago. They weren't pampered chef. The instructions were always to soak them for at least 30 minutes before putting them in the oven. I wonder if that would work.

Our stoneware doesn't need to be soaked - that's one of the many benefits!
