You could always make a fruit pizza, baking the crust before you go. Another option would be a trifle.

do the cream cheese and pineapple rum sauce with crackers
or i put cream chesee with brown sugar and then caramel sauce and use food chopper to chop candy bar and put on top, serve with apple wedges, it's always a hit
